Check the attached image. The person on the right is Kit Taylor in Return to Treasure Island - I wouldn't be surprised if the guys who made Monkey Island had watched that one ;)

We don't get to see closeups of many characters in Monkey Island, apart from Guybrush just Elaine (who looks very generic) and two guys in the SCUMM Bar (one of whom is Cobb from Loom).

Copying actor's faces isn't that uncommon in general, though. For example, Shadow of the Comet has a few: Vincent Price is appearing as the doctor, and the guy who is living in the lighthouse looks like Jack Nicholson.

There are also opposite cases. In the Dune game, the evil guy who is played by Sting in the movie wasn't allowed to look like him for legal reasons. I guess that would be the norm today - back then, they probably just did it and nobody cared, but that certainly changed...
